Healthy Choc Banana Cake

I’m always trying to create yummy and healthy cakes for my boys, so they don’t feel like they are missing out. For them, ‘regular’ birthday cakes are a no-go as they are packed with refined sugars and often artificial colours and other nasties. This is a perfect chocolate mud cake in disguise, where the banana flavour comes through as a delicate hint.

Healthy Choc Banana Cake

Dee's Home Kitchen
This cake is deliciously moist and is perfect as a healthy option for birthdays, morning tea... whenever really! The cake itself is gluten, dairy, nut and refined sugar free. The frosting has a small amount of sugar (which varies according to the chocolate variety you choose - I use Lindt 85-90%).

Course Dessert

  • 400 g bananas (overripe)
  • 300 g self-raising flour gluten free
  • 40 g raw cacao powder

  • 1 tsp apple cider vinegar
  • 1 pinch fine sea salt

  • 100 g dark chocolate (I use Lindt 85-95%)
  • 200 ml coconut milk

  • Blend all cake ingredients together until smooth.
  • Transfer to a springform pan lined with baking paper and bake for approximately 40 minutes.
  • Let cake cool on a wire rack for approximately 15 minutes.
  • While cake is cooling, prepare chocolate ganache.
  • Use a double-boiler (bowl of water on top of saucepan filled with water) to melt all ganache ingredients until well combined and smooth.
